Ingredients

350g teff flour
100g corn starch
100g rice flour
1 package (7g) dry yeast
2 tsp sugar e.g. xylitol
1 tbsp bread spice of choice
1.5 tsp salt
450ml lukewarm water
1 tbsp psyllium husks ground/powder
1 tbsp olive oil

Steps

Mix the dry yeast, xylitol sugar and approximately 100 ml of the lukewarm water with a whisk until the yeast has dissolved well. Then set aside for 5-10 minutes.

Add the dry ingredients into the bread pan of the breadmaker with the kneading blade inserted.
Roughly mix the ingredients in the pan with a spatula.
Pour in the yeast mixture and the remaining lukewarm water with the oil.

Select the programme "gluten-free bread" and press start.
Optional: You can remove the kneading blade after the kneading time is over.

If necessary, press the dough into shape again with a dough scraper (push it down from the edge) and carefully make cuts into the top of the dough. Sprinkle a pinch of teff flour on the dough for a special look.
Optionally also sprinkle 1 tbsp gluten-free oat flakes on top.

Once the bread is done, take it out of the bread pan and place the bread on a board.

Allow to cool completely and wait at least 2 hours before cutting.
