Gin Basil Frozen Yogurt

2 bunches of basil
2 organic limes
40g of sugar
250g yogurt 3.5% fat
100ml of gin

Wash basil, shake dry and set aside a handful. Coarsely chop the rest of the basil. Rinse lime through hot water, dry, grate the skin for zest and squeeze out the juice. Mix basil, lime zest, lime juice, sugar, yogurt and gin in a bowl. Pour the yogurt mixture into 2 ice cube trays and freeze overnight.

Remove ice cubes from the moulds and put in the Panasonic Slow Juicer MJ-L600 (frozen attachment). Scoop out 2 balls and arrange in a cup. Decorate with basil leaves and serve.

Tip: Not a basil fan? Then simply replace it with parsley or tarragon, this also goes well with gin.
