Dough:

2 1/4 tsp dry yeast

552g flour

1 tsp sugar

1 tsp salt

200ml hot water

100ml warm milk

1 1/2 cups mozzarella

1 cup feta

1/2 cup parmesan

Steps

For the dough: Place all the measured ingredients in the bread pan of the breadmaker (with the kneader in place) in order, starting from the dry yeast and finishing with the olive oil. |

Make sure to place the dry yeast away from the kneader and its axis to avoid the dough not rising correctly. Place the dry ingredients on top of the dry yeast and avoid it coming into contact with the liquid until mixing begins. |

Select the 'Pizza Menu' on your breadmaker and allow for dough kndeading and rising for 45 mins. Remove the dough once the machine beeps 8 times and 'End' flashes. |

For the filling: Mix the 3 types of cheese together in a bowl. |

Then stuff each piece of dough with the cheese mixture and roll up the sides to form a boat-shape. |

Brush the edges of the dough with the egg yolk. Then cover with a clean towel and leave to rise for another 15 - 20 mins at room temperature. |

Preheat your microwave oven to 200°C and bake the Khachapuri for 17 - 20 minutes. |

Afterwards, take the Khachapuri out of the oven, make a well in the centre of each Khachapuri and break an egg inside each well. Then put back in the oven and cook for an extra 2 - 3 mins. |

Take out of the oven and serve with butter and herbs. |
