Puff Pastry Apple & Camembert Swirls Recipe

Crisp puff pastry wrapped around softened apple slices, cinnamon sugar and pockets of melted camembert, finished with a glossy marmalade or fig jam glaze.

1 sheet puff pastry thawed
2–3 apples halved, cored and thinly sliced lengthways
1 lemon juiced
80g caster sugar
2 tsp ground cinnamon
salt and pepper
120g camembert thinly sliced
4 slices pancetta
Marmalade or fig jam, for basting
1 muffin tray small enough to rotate freely on the wire rack inside the appliance
butter or oil spray for greasing

Steps

Halve, core and thinly slice the apples lengthways. Pour the lemon juice into a bowl, add boiling water, then add the apple slices and microwave on the Microwave function for 30 seconds until just softened. Drain well and set aside.

Mix the caster sugar, cinnamon and a small pinch of salt together in a shallow bowl.

Cut the puff pastry sheet into strips approximately 10 cm x 5 cm.

Coat both sides of each pastry strip evenly in the cinnamon sugar mixture.

Arrange the apple slices slightly overlapping along one long edge of each pastry strip, allowing the curved edges to sit just above the pastry to create a rose effect.

Tuck slices of camembert in between the apple slices along the strip.

Fold the pastry up over the base of the apples and cheese, then roll the strip tightly into a spiral.

Place the wire rack into the Panasonic Air Fry Combination Microwave Oven. Place a muffin tray, suitably sized for your appliance on top of the wire rack. Preheat the Air Fry Combination Microwave Oven by pressing Air fry once (air fry 1,180 °C)  followed by pressing start. It’s important that the muffin tray and appliance are hot.

Once preheated, place each swirl into a muffin tin cavity. Be careful as the tin will be hot.

Cook using the Air Fry function at 180 °C for 10 minutes until slightly puffed. Add pieces of pancetta covering the spots of pastry that are browning – this protects those spots and allows the pancetta to get nice and crispy. Air fry for another 5–10 minutes.

While still warm, brush the tops generously with marmalade or fig jam to glaze.
