1 tsp dried yeast | |
250g strong white bread flour | |

Sourdough starter Mix the sourdough ingredients in a glass bowl. Cover with a damp tea towel and secure with an elastic band. Leave for at least 12 hours to prove at room temperature. |

You will have enough starter for two or three loaves. Keep the remaining starter covered in the fridge for up to 2 days. |

To make the Sourdough bread When you are ready to make the bread, make sure the starter is at room temperature and add 250g to the bread pan. |

Put the remaining ingredients except the dried fruit, into the bread pan in the order listed above. |

Select the Sour Dough Program and press start. After the first knead approx 7 mins in or 4 hours 53 mins showing on the timer, add the fruit. |
