Wash limes with hot water, dry and divide into eight pieces. Distribute the eight pieces into 2 Longdrink glasses (395 ml) and crush them each with 2 bar spoons of white cane sugar. Distribute the cucumber-celery juice evenly in both glasses, add ice and stir with a bar spoon until the sugar has dissolved. |

Wash mint, shake dry and peel off the leaves. Top up the drink with soda, mix again and garnish with cucumber and mint. Tip: If you do not use the juice directly, it should be placed in a closable container and stored in the refrigerator, otherwise it will oxidise very quickly and turn brown. |
