Creamy, indulgent soft-serve ice cream made with frozen bananas, silky cottage cheese and a hint of espresso. A no-churn dessert that’s naturally sweet, protein-rich and finished with a dusting of cocoa powder. A refreshing, naturally sweetened lemonade combining juicy watermelon and crisp Granny Smith apples with a zingy lemon finish, finished with chia seeds. Perfect served ice-cold on a warm day.

Note: The sweetness and juice yield will vary naturally depending on watermelon ripeness, apple tartness and lemon size. Adjust lemon quantity to taste for your preferred level of tartness.

Ingredients

2kg watermelon skin removed and cut into large chunks
2–4 lemons to taste
2 Granny Smith apples quartered, unpeeled
2 tbsp chia seeds
ice to serve 

Steps

Prep all ingredients. Remove the watermelon rind with a knife and cut into large chunks. Wash and quarter the apples without peeling.

Feed the watermelon chunks and apple quarters into the juicer. Reserve some apple chunks to pass through the juicer at the end. The hardier fruit will help push the softer watermelon and lemon all the way through.

Peel one lemon with a serrated knife, removing all the outer skin and pith. Feed the lemon into the juicer.

Stir and taste the juice. Add additional lemon gradually until you reach your preferred level of zingy lemonade flavour (you may need 2, 3, or even 4 lemons total depending on your fruit).

Pass the last chunks of apple through the juicer to clear the chamber.

Pour the juice into serving glasses over plenty of ice.

Stir the chia seeds through the juice and allow to sit for 15 minutes to let the seeds absorb liquid and plump up.

Give the drink a good stir and serve immediately over lots of ice.
